Grilled Vegetable Foccacia With Hawaii
Island Goat Dairys Midnight Blanc

1 Loaf Sour Dough or Focaccia, sliced
1 Zucchini
1 Onion
1 Bell Pepper
1/2 Heart of Palm
1 jar Marinara Sauce, thinned w/ tomato juice
Extra Virgin Olive Oil
Balsamic Vinegar
8 oz Goat Cheese, local
Honey
Lemon Zest
Parsley, fresh
Grill zucchini, onion, bell pepper, and heart of palm until slightly tender. Then cut vegetables into 1/4 inch size cubes. In a bowl, season
and mix vegetables with salt, fresh cracked pepper, and a drizzle of olive oil and balsamic vinegar.
Brush sliced bread with marinara sauce and sprinkle with grilled vegetables. Bake at 300 degrees for 5-7 minutes. Remove from oven
and top with a sprinkle of goat cheese (Hawaii Island Goat Dairy, Midnight Blanc), honey, fresh cracked pepper, lemon zest, extra virgin
olive oil and parsley.
